Zucchini Muffins

3 cups grated fresh zucchini
2/3 cup melted unsalted butter
1 1/3 cup sugar
2 eggs, beaten
2 teaspoons vanilla
2 teaspoons baking soda
Pinch salt
3 cups all-purpose flour
2 teaspoons cinnamon
½ teaspoon nutmeg
2 cup pecans
1 cup raisins or dried cranberries

You don’t need a mixer for this recipe.

Preheat oven to 350 degrees. In a large bowl combine sugar, eggs & vanilla. Stir in zucchini & then butter. Sprinkle baking soda & salt over zucchini mixture & mix in. In a separate bowl, mix together flour, nutmeg & cinnamon & stir into zucchini mixture. Stir in nuts & fruit.

Coat muffin cups with oil spray. Fill them with the dough, filling the cups up completely. Bake until golden brown & the top bounces back when you press on it, about 25 – 30 minutes. Set on wire rack to cool for 5 minutes. Remove from the tin & let cool another 20 minutes.

 Makes about 14 regular-size muffins.
